Rexy's Cheesy Chicken Sausages

These delicious sausages were made by MBL Merchandise's resident butcher and smallgoods hobbyist extraodinaire, Rex.  The Merchandise Sales staff were lucky enough to enjoy these tasty sausages on bread with mustard sauce for morning tea. They are so easy to make and the kids will love them!

 

 Ingredients:

11kg skin on chicken thigh fillet

 

1.25kg MBL Country Style Poultry Meal 351296

 

2kg Iced water

 

1kg Hi-Melt diced cheese or cheap cheddar cheese 

 chicken sausages

 Preparation:

 

Remove skin from chicken thighs, pack skin in bags (we use zip-lock), flatten the bag and freeze. When frozen, cut

into strips and mince skin through a fine (4-5mm) plate.

 

Mince chicken thighs through an 8mm plate. Mix together Country Style Poultry meal with minced chicken thigh,

skin and water and mix in very well.

 

Dice cheese to smaller than 1cm cubes and mix in to meat. Prepare sheep or hog casings, fill chicken mixture

into casings and link the sausages. Hang under refridgeration to develop flavor and ‘set’ the sausage. Yummy.

 

Note: If you can't use our 10kg Hi Melt diced cheese, buy the cheapest "no brand" cheddar you can find because

it will not melt as quickly as the dearer brands when cooking the sausages.

 

Makes 15.25kg chicken sausages
