MBL - Pork Recipes

What a wonderful night we enjoyed at the first South Australian Pork Butcher Summit, organised by Australian Pork at Regency TAFE.
 
MBL showcased products for value adding pork. Here are some of those products.
     
Apple and oatmeal chops
 
This involves pork chops stuffed with traditional spicy apple flavoured stuffing then coated with a crunchy oat crumb blend.  These can be barbequed or shallow fried until fully cooked.
 
Texas BBQ pinwheel loaf
 
This is a pork loaf with a swirl of rich Texas BBQ paste with spinach, suitable for family dinners or BBQ parties.  
 
This loaf can be cooked as a roast or skewered and sliced into individual “pinwheels” about 2cm thick to cook on the BBQ or shallow fry.
 
While the recipe works a treat with pork, it can also be applied to beef or chicken.
 
We recognise that Christmas is not the time to launch new products and so we are holding over ingredients for the above two until the New Year.

Chilli ginger & lime sausages
 
With a speckled spicy look and Asian flavor note, this was well received by MBL members. This fine sausage meal also goes well with chicken.
 
Hoi Sin pork ribs
 
With a reddish brown colour and fine oriental note on pork ribs, this makes a delightful side dish at any dinner table. Also lends itself to chicken.
 
Tequila & lime sprinkle
 
My favourite sprinkle makes a great stir fry.
 
Cut pork or chicken breast into cubes or strips, add 50gm of Tequila Lime and 6gm of Chicken Gourmetier per kg of meat, add 50gm of rice bran oil, mix and stand overnight.
 
Stir fry in a wok and serve with a green garden salad.
                                                                              
OR
 
Cut any meat into cubes and using the above recipe with green, red and yellow capsicum and onion, make a Mexican kebab that will look as good as it will taste.
 
The kebabs and stir fry are of medium heat - truly an adult food delicacy!
