3.6kg    flare fat cubed
700 gms pearl barley
800 gms flour
800 gms fine oatmeal
500 gms onion fresh

Seasonings

300 gms salt
100 gms ground black pepper
40 gms ground pimento
40 gms ground coriander
40 gms ground mustard
40 gms ground sage

Barley cooked for four hours. Cubes of flare fat are scalded. Onion finely chopped and cooled slightly. Fill into size 43 Hog casings, or ox runners. Pudding then cooked in water at 82 degrees centigrade for 40 minutes.
