In this edition, freshly qualified as a smallgoods maker, butcher Kellie Walduck has captured the palates of judges in Australian Pork's SA bacon competition with her coffee bacon. The coffee bacon, which came in as runner up in the recent bacon awards, is flying out the door at her St James Quality Cuts butchery at Clapham and the secret is in the coffee beans she uses.

Also in this edition, employment in the industry is examined with less than half of advertised job vacancies for retail butchers being filled due to a growing skills shortage, according to a new Federal Government report. The report reveals the proportion of vacancies filled has dropped steadily in recent years to a low 44% in 2018 after most applicants were dismissed as unsuitable.
