MBL News is the leading trade magazine for butchers.

In this edition, a pool of 27 young people will be ready to apprentice as butchers after completing the government-funded basic training in butchery, a course offered under the Skilling South Australia program to help counter the meat industry's growing skills shortage. Under the program, the government also funds a two-week work placement to allow butchers to asses the young hopefuls and consider offering apprenticeships.

Since his early days as an apprentice, Scott Johns has identified his niche in butchery as a purveyor of premium meat to people who aren't fazed over price. To that end, he sells local and imported wagyu such as Japanese Master Kobe MB11 wagyu porterhouse at his eastern suburbs butchery, the Meat Project at Glenunga. The imported wagyu retails for up to $500 per kilo and isn't usually available elsewhere in Adelaide.
