F-1 is well suited for all Southern European style fermented sausages with a short production time. The final pH may be regulated by adjusting the amount of fermentable sugars added to the meat mince. F-1 is a mixed culture containing Pediococcus pentosaceus and Staphylococcus xylosus in a convenient freeze-dried form. The high activity of P. pentosaceus ensures a short lag phase and a fast pH-decline. S. xylosus gives a strong, stable color and an aromatic flavor. Add 25g culture to up to 100kg meat.
